I am really trying to make healthy foods

After living in a temporary home for 3 months and feeling like I couldn't really make much for my family...I have a renewed vision for feeding my family. Not to mention making snacky meals while Chuck was living in another state and I only had to make dinner for the girls and I. I needed the boost, for I have been in a bit of food slump for awhile. I feel like I make the same 10-15 meals and I am getting a bit tired of it. This year one of my goals was to have half of our meal be fruits and veggies. I have spent some of my free (which, let's be honest - I don't really have free time right now) time pouring over recipe books (one of my favorite things to read) and I am making a menu and working off of that for my shopping and meals. I thought by putting it out there it might make me feel a little accountable for it.


I tried a new recipe for roasted veggies. I got the recipe from another blog (HERE). I didn't use exactly the veggies that it called for, but when I was shopping that week, half of my carriage at the store was full of produce.
Here it is before I roasted it. I am loving this stoneware. Everything turns out great in it.
I made this with a few other new recipes that night. I will post later about the whole wheat french bread (yum).

Last night I made turkey tetrazzini (another new recipe) and we all loved it. If I hadn't had company over for dinner I would have taken a picture of that too. =)

So, I will try and post some recipes that I have tried and liked. Maybe I can inspire someone else out there who is in a food slump. Any fantastic healthy recipes that you have I would love for you to share. Bring it on, inspire me. =)

That looks delicious!!! I am going to check out the recipe. We eat alot of rice and beans lately. My babies love black beans just plain. I too have been on a much healthier kick and I will be looking back for inspiration and ideas : )

I'm looking forward to hearing your meal ideas. I have always been too creative of a cook. My poor family never knows what to expect and I seldom make the same thing twice. I only have maybe 10 to 20 recipes that I repeat once every few months. I could definitely share some recipes. I'll see if I have some of them typed up already on my computer. I'll e-mail them to you.

I know what you mean about the food slump. I am forcing myself to try new recipes - not that I don't like to, it just takes time to find the right things and then do the shopping. I am making chipotle black bean chili which is new for us. It's simmering right now and smells great. I look forward to you sharing your good recipe finds.

My hand is raised for the food slump category ... we had breakfast for dinner. Blah ~ not the healthiest nor the most satisfying. Would love to see new, healthy recipes!! Can't wait! :)

Oh please post the Turkey tetrazini (sp) I am always looking for recipes my kids will eat. get tired of the basic 3 or 4 they like,.

My favorite recipe website right now is recipezaar.com.

A couple of days ago I saw a veggie burger recipe I'd like to try: Jalapeno-Red-Bean-BBQ-Burgers. (It probably could be made without the jalapenos for the less bold.) Don't go there hungry - you won't be able to get away!

Their Easiest Ever Pizza Dough is my pizza recipe, too. It has worked with any combination of white, whole wheat, or 7-grain flours, and it really is easy, otherwise, I would not use it. I often make it like your white pizza - Yum!

I love getting new recipes to try, like you said, trying to get out of the cooking slump. We try to eat lots of veggies too.

I was SOOOO wishing to have a Pampered Chief cookie sheet for making my cookies the other day. My metal-alluminum ones got all scrathed up cleaning burned pizza off of them...sigh. It's so hard to find a metal cookie tray that doesn't burn the bottoms of the cookies...I miss my pans in Japan.

I did take a picture of a meal when we had company and I think she was a bit shocked. It shocked me that she thought it was strange.
